Turkey, mango and macadamia salad
Serves 4
Ingredients:
125 g light natural yoghurt
¼ cup 97% fat free praise mayo
½ teaspoon dried chilli flakes
1/3 cup coriander seeds
420 g tin of mixed beans, drained and rinsed
2 red capsicums sliced
1 red onion thinly slice
1 large mango diced
Baby rocket
2 cups sliced skinless turkey breast
32 macadamia nuts
Method:
1. Combine yoghurt and mayo in a bowl and beat lightly until smooth. Stir in chilli flakes and 1 tablespoon of coriander. Cover and refrigerate.
2. Combine remaining and divide onto plates. Add 8 nuts per plate. Serve dressing separately
